Donkey shaped pancake

Pancake Day (Shrove Tuesday) is fast approaching, and we've got a delicious and fun pancake recipe for you.

This recipe is quick and easy, and is a great way for you to support our work for donkeys and mules in Ireland.

Recipe: 

  • 300g self-raising flour
  • 1 tsp baking powder
  • 1 tbsp caster sugar
  • Pinch of salt 
  • 2 medium eggs
  • 300 ml milk 
  • Knob of butter
  • Toppings 

Method: 

  1. Add the flour, baking powder, sugar, salt and eggs to a mixing bowl. Whisk to combine. Add the milk and whisk again until smooth. If it's a little thick, add more milk. 
  2. Add the knob of butter to grease the pan. Add a spoonful of batter to make a large pancake. (This pancake will become your donkey ears)
  3. When bubbles start to form on the surface, it's time to flip your pancake and cook the other side. 
  4. Once cool, place your pancake on a chopping board and cut out two donkey ears. 
  5. Grease your pan again, and make one large pancake and one small pancake. 
  6. While warm, place your large pancake flat, and place the small pancake on top for the nose. Place the donkey ears. 
  7. Ask your little helper to add the final touches. We've used banana for the nose, chocolate drops for the eyes and chocolate sauce for the hair between the ears.
